Lemon Ricotta Cottage Cheese Pancakes

When I was a little girl, my father used to drive a Polly-O cheese truck. The truck was big, bright yellow, happy and filled with cheese, not unlike my dad. I thought it was cool that he delivered cheese to pizzerias because cheese makes most people happy and, well, I believed that those who could not eat cheese would generally be less happy. I still hold the same beliefs today (my sincerest apologies to vegans and those with lactose intolerance). My dad used to eat a lot of cheese and, so, I thought he would be happy forever. I also thought that he would live forever, and that nothing would ever change, but his age has been a marker of change.

Fruity Oatmeal Breakfast Bake

This fruity oatmeal bake came about because I want a good, warming breakfast in the morning without relying on eggs or having to start from scratch to make something in the AM. Staring into the depths of my freezer I questioned when I’d make a smoothie again and honestly answered myself with a “no time soon.” In the colder months I’m way less about smoothies and more about comfort.

What I’m enjoying most about the summer is being around my family, close to the sun, with access to the beach. I love our shared meals, the fruit we always have in the house, my long post or pre-breakfast bike rides. Making breakfast for the family feels like less of a chore and more of a gift, dinner is more of a chore - if I’m being really real.
