Meat + Veggie Lovers Leftover Pizza Omelette

I love eggs. I love my eggs scrambled, sunny side up and poached. Sure, I also love a fluffy filled to the max mega frittata and the popular omelette but, of late, my only true love is the open faced omelette. The open faced omelette, AKA the pizza omelette - made with a thin layer of egg and then piled high with ingredients such as veggies, meats and/or cheese, made with a thin layer of egg and then piled high with ingredients such as veggies, meats and/or cheese makes for a beautiful breakfast presentation. You can see the layers of ingredients; so readily apparent because they’re not folded inside of the egg mixture and then lost. No, not here. This exposed omelette reminds me of a pizza and, yes, I do cut and slice it like one. And, no, I do not share. 


Aside from their protein packed punch, keeping a lady full for hours until lunch time hunger strikes, eggs are a great vehicle to use leftovers. If you’re not already doing so, please start cooking just so you can house your leftover veggies, meats and cheeses in an open faced omelette. 

This week’s preparation of chicken sausage with veggies was used not only for dinner and lunchtime quesadillas, but it was stacked atop a thin cooked egg and enjoyed all over again. I’m also willing to guarantee that this meal is going to keep you satisfied and fuller longer because of it’s nutritious combo of protein, fiber and the natural carbs you’re getting from the veggies.


So, without any further adieu, let me encourage you to put your leftovers down, flip ‘em and reverse ‘em … onto some eggs.


Cook so you can repeatedly treat yourself to something delicious.
Cook because it matters and it can be cost effective. Hi, eggs and leftovers.
Cooking can take as little as 10 minutes to make a meal and you needn’t cook 21 meals a week.

Gather ye leftover veggies from the week, roasted or sauteed
Scramble 1 egg and 2-3 whites
Add eggs to a pan coated with non-stick spray, top with a mound of greens, leftover veggies, cheese if you please, and cover for 7-10 minutes until eggs set, veggies warm and cheese melts
