Two Salsas For Your July 4th Table

Making salsa is simple. It requires little prep, minimal tools and ingredients that are easy to come by in your grocery store. A certified crowd pleaser, great for vegetarians, vegans and even your meaty buddies (scoop this fruit salsa on a burger, shrimp or salmon) and delight everyone around your table.

Corn and black bean salsa packs a filling protein punch while the below pineapple salsa will tease your tastebuds with a sweet, savory and spicy party that I’ve been told is a “mouth-gasm” during my last salsa demo!

BLACK BEAN + CORN SALSA

1 can of corn, approximately 2 cups
1 can of black beans, drained and rinsed
3-4 plum tomatoes, diced and seeds removed
3-4 scallions, thinly sliced into rounds
7-10  sprigs of fresh cilantro, finely chopped
Juice of 2 limes
1 teaspoon of salt

Combine the following in a serving bowl: corn, beans, tomatoes, scallions, cilantro
Add the lime juice and salt, and stir to combine - adjusting flavor as needed!
Serve with tortilla chips or with endive or romaine lettuce leaves
Use to top fish, chicken, tacos, salads or eggs
Add avocado for a dose of heart healthy fat

FRUITY  SALSA 

3 cups diced fresh pineapple or summer/seasonal fruit of choice
1 red bell pepper, chopped
½ cup chopped red onion
¼ cup chopped fresh cilantro
1 medium jalapeño, seeds and ribs removed, finely chopped
Juice of 2 limes
¼ teaspoon salt

Combine the following in a serving bowl: pineapple, bell pepper, onion, cilantro, and jalapeño
Add the lime juice and salt, and stir to combine - adjusting flavor as needed
Serve with tortilla chips or with endive or romaine lettuce leaves
Use to top fish, chicken, tacos, salads or eggs
