Tina’s Ridiculously Simple Tomato Soup
Canned tomatoes, chicken stock (or concentrated bullion) wine, butter and onions are something I always have in my home. And, usually, a few carrots or bag of baby peeled carrots so I have something lying around when I want to snack “sensibly.” All of the above are my cooking essentials, particularly in the case of the aforementioned wine. Anything that allows me to cook and party, well, I’m into it.
From sauce to soups canned tomatoes can save a weeknight or a weekend dinner party. They (canned tomatoes, of course) can also save a single woman’s life after she’s had dental work done. Would I love for someone to make me soup right now? Yes, duh. But, alas, it’s not my lot thus far to have meals cooked for me - so I’ll have to care for myself in my times of need. Wonton Soup is bloating and lately meat is weirding me out (I wonder how long that phase will last). Braless and drooling, this soup is my lifeline tonight.
Most times soup is low budget to prepare (particularly this one), easy to make when you’re solo and still WAY DELICIOUS enough to serve your more refined dinner guests. Slap a long crostini on top of the bowl with some pesto and - BOOM - refined meal for your dinner guests. My friends (who refers to people as their dinner guests - I guess refined humans do?) and I just talk about unhooking our bras and unbuttoning our pants as we eat at my table. Then we actually unhook and unbutton as we walk toward the couch. I’m imagining we wouldn’t do this in mixed company but, really, who knows. We’re a comfortable bunch.

Soup is portable for work lunches, great for an evening reheat and the way and the light when it comes to stocking a freezer. Even if you don’t like to cook, this isn’t cooking. Preparing this soup is a matter of having 5 or 6 pretty standard items in your home. Get with it. On this side of Queens I’m also absolutely positive that on a cold winter night, when I’m hauling ass home from work, tired and with no motivation to cook - I will happily defrost this very soup (that is if I don’t slurp it all up and drool it all down my chin in the days to come).

2 cans of crushed tomatoes, don’t talk to me unless you use Scalfani
2 medium onions quartered
6 tablespoons of butter, relax - there’s no cream in this and it makes like 12 cups
1 cup of white wine, or more …
Vegetable or chicken bullion, I’m a fan of Organic Better Than Bullion - it’s a concentrate and Trader Joes makes one too
A few baby carrots or like 1 or 2 peeled
Place all ingredients in a large stock pot and bring to a boil. Cover and reduce to a very low simmer, continuing to cook for about 45 minutes to 1 hour. Remove from heat, allow to slightly cool, puree in a blender or use an immersion blender - processing until smooth.
